>Sheep and goats belong to Caprines of the order Artiodactyla (even-toed hoofed animals). The true sheep which resembles the domesticated animal is Ovis. Many breeds exist and a characteristic feature is the animal’s climbing ability, making it appropriate for grazing in mountainous areas. Lamb is less than one year. Mutton is the meat from animals more than one year old. Beef and mutton share allergens and it cannot be excluded that mutton has some allergens in common with sheep wool. Mutton is regarded as a weak allergen and preparations of lamb meat have been suggested as an alternative to hydrolyzed cow’s milk formulas (1). The allergenicity of the meat is decreased by heating and pepsin treatment (2, 3).
